Food Safety Standards & Hygiene Guidelines

Document Version: Draft v0.9 (Pre-pilot) · Last updated: October 2026

1. Commitment to Food Safety & FSSAI Standards

At Good to Share, food safety is uncompromising. Our platform is strictly designed for safe, eligible surplus food—never spoiled, expired, or unsafe items. All participating food business operators must adhere strictly to the regulations laid out under the Food Safety and Standards Act, 2006 (FSSA) and the rules established by the Food Safety and Standards Authority of India (FSSAI).

2. Merchant Eligibility Criteria

Before any merchant can publish listings on Good to Share, they must satisfy the following baseline standards:

  • Hold a valid and active FSSAI Registration or State License.
  • Maintain clean, hygienic, and pest-free premises in accordance with Schedule 4 of the FSSAI Food Business Regulations.
  • Operate a physical commercial food facility in the Kochi pilot area.

3. What Food Can Be Listed as Surplus?

Eligible surplus food includes wholesome items that remain unsold due to over-preparation, end of baking cycle, or inventory surplus:

  • Allowed: Fresh breads, morning pastries, unsold lunch/dinner meals maintained at proper temperature, seasonal farm produce, and packaged snacks within their best-before period.
  • Strictly Prohibited: Expired food, food previously served to buffet or dine-in customer tables, food stored outside safe temperature zones, compromised packaging, or products subject to any regulatory recall.

4. Temperature Control Guidelines

Merchants must enforce strict temperature protocols during preparation, holding, and pickup:

  • Hot Cooked Foods: Maintained in thermal holding units at or above 60°C (140°F) until customer pickup.
  • Chilled Foods & Dairy: Kept refrigerated continuously below 5°C (41°F).
  • Dry Baked Goods: Kept in clean, dry, covered display cases protected from pests and direct sunlight.

5. Mandatory Allergen Disclosures

Every food listing must clearly disclose if it contains or is prepared in a facility with common allergens, including gluten, dairy, eggs, soy, peanuts, tree nuts, and seafood.

6. Packaging Standards

All surplus items must be packaged in food-grade, leak-proof containers or biodegradable wraps suitable for transportation by the customer.
